  1. Butter cookie sheet.
  2. Combine sugar and corn syrup in a 2 quart glass bowl.
  3. Microwave sugar and corn syrup on high for 3 minutes until mixture starts to turn slightly yellow and starts bubbling.
  4. Remove from microwave (careful, extremely hot!) and stir in peanuts.
  5. Microwave on high for 3 minutes until it is fully bubbling and yellow.
  6. Remove from microwave and stir in butter and vanilla.
  7. Microwave on high for 1 minute.
  8. Remove from microwave and stir in baking soda until mixture is light and foamy.
  9. Pour onto cookie sheet and spread thinly (or tip cookie sheet back and forth to distribute evenly).
  10. Allow to cool completely before breaking into bite size pieces.
Recipe Notes

It is important to note that every microwave is different.  Newer microwaves will require less cook time than older ones.  Keep an eye on your bowl each time it goes into the microwave to ensure that it doesn’t over cook (you don’t want it to turn too golden brown) or overflow.  I have been lucky with these cook times but have read a bunch of reviews from people who had to try the recipe a couple of times before they got the timing right.
