After a day at work, an hour and a half long commute home and an evening workout I am usually pretty exhausted by the time dinner rolls around. Regardless of how I feel, I make an effort to cook dinner for my husband and myself every night. While some meals can be labor intensive, most are super straightforward like this oven baked salmon. It is such a delicious and easy meal that we have taken to eating it a minimum of once a week.

We are fortunate that good salmon is readily available in Los Angeles and, while is isn’t necessarily an inexpensive meal option, we can justify the cost of it because it is filled to the brim with beneficial elements. My personal favorite attributes are that it is full of omega-3 fatty acids making it heart healthy and is rich in essential minerals like iron, calcium, selenium, and phosphorus, as well as vitamins A, B and D.
As I have moved towards taking better care of my body I have begun treating food as medicine at an increasing frequency. Salmon is one of those power-packed foods that helps keep you healthy from the inside out. The way I look at it, a pound of salmon a couple of times a week is a lot less expensive in the long run than medical bills!
Though I would be perfectly happy eating the same olive oil coated fillet each night, I strive to mix up how I prepare the fish in order to provide us with some variety. The last thing I want to do is risk burning out on salmon! I have regularly been making the recipe I’m sharing with you today for several months and it has become my favorite.
This particular recipe combines the tang of white wine vinegar with the sweetness of honey to create a flavor that truly compliments the natural taste of fish. My mouth is watering just thinking about it! With prep taking a mere five minutes and clean up virtually non-existent (it bakes in foil friends, FOIL!) it makes for the perfect busy weekday dinner.
- 1 pound salmon
- 1 tbsp honey - I use organic
- 1 1/2 tsp olive oil
- 1 tsp white wine vinegar
- 1 tsp fresh thyme leaves - plus extra to garnish
- 1/4 tsp garlic powder
- salt and pepper to taste
- Preheat oven to 350 degrees.
- Whisk together honey, garlic powder, olive oil, white wine vinegar, thyme, salt and pepper.
- Cover baking sheet in foil and place salmon in center.
- Coat salmon in honey mixture.
- Fold the sides of the foil around the salmon completely covering the fish and sealing it off.
- Place in oven and bake for approximately 15 - 25 minutes.
Cook time is largely dependent on the thickness of your fish. I start checking cooking progress at 15 minutes and then at 5 minute increments after that.
