With the 4th of July a little less than two weeks away, those of us in the United States have barbecues, fireworks and red, white and blue on the mind. While the extra day off work for the national holiday is great, the best part of the historical day is coming together with family and friends and dedicating an entire day to pure celebration, fun and food. If you are looking for a refreshing alternative to the gallons of beer consumed each Independence Day, I have you covered with this quick and easy 4th of July cocktail.

When I say that this recipe is easy I mean that it is painfully easy. In fact, this 4th of July cocktail only requires two ingredients…red, white and blue popsicles of the Rocket Pop variety and champagne. Simply place your popsicle in a clear cup and pour away to your heart’s content! As the popsicles melt they add a hint of a fruity flavor to the champagne, elevating your basic celebratory alcohol into something uniquely flavored and decidedly patriotic.

The best part about this cocktail recipe? It can easily be made virgin by substituting the champagne with 7-Up or Sprite and served to the kiddos in your life. What are some of your favorite 4th of July traditions and dishes?
- Place your popsicles in glasses and pour champagne over them.
