Gin and tonics have been my go to drink of the season for several summers in a row now. They are crisp, refreshing, and easy to whip up…essentially they are the perfect summer cocktail. As much as I love a classic G&T, I have occasionally been known to mix things up. Since moving to Kansas City, I have been eating peaches by what feels like the gallon. Peaches at breakfast in my smoothie, peaches at lunch, peaches for dessert…in all honesty, it is getting a bit out of hand! Today’s peach gin and tonic recipe is in equal parts the spirit of my peach obsession and in the spirit of summer, because what says summer quite like an invigorating peach gin and tonic?

As you know, I am all about easy when it comes to food, cocktails, and life in general. The less frills the better, as far as I am concerned. That is why this summer twist on the classic gin and tonic is so perfect. You can make it with a mere FOUR ingredients.

Simply combine gin, tonic, a quarter of a fresh peach, and a few lime wedges, and you are ready to toast the summer.

The best part about this variation on a classic is that at the end of your drink you are treated to a delicious gin-soaked peach surprise!

- 1 oz gin - I used Bombay Saphire
- 4 oz tonic water
- 1/4 ripe peach - sliced thinly
- 1/2 lime
- 1 sprig mint - optional garnish
- Fill tall glass with ice, mixing in sliced peach and lime as you go.
- Pour 1 ounce of gin into glass.
- Add 4 ounces of tonic water to glass.
- Stir gently and enjoy!
