A Refreshing Peach Gin and Tonic Recipe

Gin and tonics have been my go to drink of the season for several summers in a row now.  They are crisp, refreshing, and easy to whip up…essentially they are the perfect summer cocktail.  As much as I love a classic G&T, I have occasionally been known to mix things up.  Since moving to Kansas City, I have been eating peaches by what feels like the gallon.  Peaches at breakfast in my smoothie, peaches at lunch, peaches for dessert…in all honesty, it is getting a bit out of hand!  Today’s peach gin and tonic recipe is in equal parts the spirit of my peach obsession and in the spirit of summer, because what says summer quite like an invigorating peach gin and tonic?

 This peach gin and tonic recipe makes the perfect companion to a hot summer night. It is light, crisp, refreshing, and easy to whip up. What more can you ask for?

Zesty Cucumber Amsterdam Mule Recipe

On our final day in Amsterdam my husband and I meandered through the streets of the city, soaking in as much of the vibrant town as we could before our flight to Prague.  We stopped for a late lunch at a little corner cafe situated on a canal and lingered there for a couple of hours, watching the city go by.

Amsterdam is a town where beer flows like water; in fact a glass of beer is considerably less expensive than a glass of water.  Needless to say, I was getting a little tired of drinking beer at every meal and decided water a cocktail was in order.  After surveying the menu I settled on a Moscow Mule, fully expecting to be served a classic no-frills vodka and ginger beer concoction.

What was placed in front of me however was a gorgeous glass filled with slices of cucumber and topped with black pepper.  I took a sip and, to my great surprise, the cocktail tasted even better than it looked!  I immediately took a photo of the drink and announced that I was going to recreate the mule recipe and share it on the blog as soon as we got home.  I did exactly that my first weekend home and thus the Amsterdam Mule was born.

Decadent and Dense Mint Chocolate Mousse

Eleven years ago I visited France for the first time and experienced THE BEST MEAL OF MY LIFE in Albi.  The five course delight was capped off by a thick, rich chocolate dessert that I was unable to identify or duplicate for years.  The dish was not quite a mousse, not quite a solid fudge…it wasn’t quite anything discernible.  I searched high and low for a decade for anything that came even close to my mystery dessert and finally stumbled upon it by mistake one glorious day when my mint chocolate mousse hardened.

Strawberry Prosecco Granita

As we look ahead towards our upcoming move, we have started making plans to do a lot more entertaining at home.  As a result, I have been on the hunt for delicious, beautiful and easy(ish) recipes to offer future guests.  This strawberry prosecco granita will be a perfect dessert to serve friends on warm evenings at home.  After all, how could you go wrong when you’re combining prosecco and strawberries?!

The recipe itself was exceedingly easy to prepare.  The only trick is that you have to continue scraping the prosecco granita with a fork every hour or so as it freezes to break it up and give it that yummy crushed ice consistency.  Therefore this is definitely a dish you want to make on a day when you’ll be home for a few hours.  Perhaps on a day when you will be preparing for a dinner party?

This delicious recipe made enough to cool us down and satisfy our taste buds for several days in a row.  I have already been getting requests to make it again so it seems that it will be a staple in our household.  We both highly recommend giving it a try.

Ingredients
  • 16 oz strawberries hulled and pureed in a blender or food processor
  • 1/2 cup water
  • 1/2 cup sugar
  • 1 sprig of leaves mint
  • 1/2 lemon squeezed
  • 2 cups prosecco
Servings: people
Instructions
  1. Combine water, sugar and mint leaves in a small sauce pan to make simple syrup. Stir until sugar dissolves. Remove from heat and let sit for 20 minutes.
  2. Puree strawberries, blending in lemon juice and mint from simple syrup.
  3. Combine pureed strawberry mixture, prosecco and simple syrup in a glass baking dish (I used an 8x8). Place in freezer for 4-5 hours scraping the mixture with a fork every hour to break it into pieces.
  4. Serve with a sprig of mint and enjoy!
