Eleven years ago I visited France for the first time and experienced THE BEST MEAL OF MY LIFE in Albi. The five course delight was capped off by a thick, rich chocolate dessert that I was unable to identify or duplicate for years. The dish was not quite a mousse, not quite a solid fudge…it wasn’t quite anything discernible. I searched high and low for a decade for anything that came even close to my mystery dessert and finally stumbled upon it by mistake one glorious day when my mint chocolate mousse hardened.

Now, referring to this recipe as “mousse” is a bit deceptive. The recipe was in fact based on a medley of mousse recipes but my end result was far, far from what you would normally consider mousse. I ultimately enjoyed the texture and weight of this dessert much more than I do that of mousse and am happy to report that I have successfully duplicated it and enjoyed it just as much each time I’ve made it. So, if you are looking for a take on traditional mousse this simple, four ingredient mint chocolate mousse recipe is the dessert for you!

Plus four organic eggs

Equals this glorious rich treat!
- Melt dark chocolate
- Beat 4 egg yolks into the chocolate one by one, setting aside whites in a large bowl
- Beat whites until soft peaks form
- Add sugar into whites and beat until peaks harden (don't overbeat)
- Gently fold white mixture into chocolate in three parts (I don't quite use all of the whites mixture but more like 3 3/4 egg whites)
- Transfer mixture to dishes and refrigerate for an hour or two
