One of the things I love the most about traveling in Italy is that I can find a perfect Aperol Spritz around every corner. For an Aperol-loving girl like myself, it is literally heaven on Earth. Of course, at some point, the vacation has to come to an end and I am inevitably forced to return home to a country that hasn’t quite perfected the use of Aperol in cocktails.
Following this last trip to Venice however, I decided to bring the taste of Italy back with me in the form of this refreshingly light Aperol Grapefruit Splash. A drink that, thanks to its gorgeous blood orange color, just so happens to also make the perfect Valentine’s Day cocktail.

This delicious drink recipe is quick, easy and relatively foolproof, as you can alter all of the ingredient amounts based on personal taste.

Fancy something lighter? Simply add extra grapefruit juice. Looking for a bit of bite? Then double up on the Aperol.

The cocktail is also perfectly picturesque, ideal for boozy brunches with the girls or nights in with that special someone.

The best part about the Aperol Grapefruit Splash? Every sip you take will make you feel that much closer to dreamy days in Italy.
- 3 ounces Aperol
- 3 ounces vodka
- 4.5 ounces grapefruit juice
- 7.5 ounces ginger beer
- Mix all ingredients in a large pitcher and stir gently.
- Serve over ice.
