Going gluten free has been easy in some ways and surprisingly challenging in others. It has been amazing what foods I have found myself desperately missing and just as amazing to note what I don’t miss eating at all. Take this discovery for example; it turns out that I can live without bread and rarely give the absence of it from my life a second thought. What I can’t live without is the deliciousness that can be found between two freshly baked slices. Sometimes I just can’t help but crave the familiar and comforting taste of a classic sandwich.
In the past I would have given in to my appetite, but at this point in my gluten-free journey it isn’t worth the level of discomfort I’ll inevitably feel if I submit. That’s where this BLT salad comes into play. In this salad I get all the goodness of a classic BLT without any of the unfortunate side effects of gluten.

I have been enjoying this creation for the past year and it has become my go-to summer salad thanks to how light and satisfying it is. Now that the days are getting longer and warmer I am finding myself making it again at an increased frequency and decided it was high time to share this gem with all of you.

Fresh ingredients elevate this “BLT” to healthy new heights.
Now, I personally hold the conviction that it is impossible to go wrong when combining avocado and bacon. Add in the tang of cherry tomatoes and a light lemon dressing and the end result is a positively addictive salad with a bite.

A light summer salad meant to be shared.
The best part about this BLT salad? It offers the familiar taste of an old classic with none of the guilt. BLT salad for the win!
- lettuce - I use a 5 ounce bag of salad mix from Trader Joe's
- 1 large avocado
- 1/2 cucumber
- 2 handfulls cherry tomatoes
- 6 pieces bacon
- 1/8 - 1/4 cup olive oil - for dressing
- 1 small lemon - for dressing
- feta cheese - optional topping
- Cook bacon and allow to cool before crumbling
- Wash lettuce and prep all vegetables
- Mix together olive oil and lemon dressing
- Combine all ingredients, give the salad a toss and enjoy!
