I am something of a chocoholic. I always have been and imagine that I always will be. In fact, I have distinct early memories of “helping” my mother prepare chocolate mousse prior to dinner parties when I was a tiny little thing. She always made amazingly rich mousse that my infantile palette could handle all of about two bites of. It wasn’t for the faint of heart.
Fast forward twenty-odd years and I now find myself living a dairy-free, mousse-free existence. It isn’t any fun at all. To remedy this I’ve been experimenting with various lactose-free mousse alternatives in hopes of creating something even remotely close to my mom’s amazing chocolate mousse. I’m happy to report that I finally succeeded in this dairy free pots de crème recipe.

While it would be hard to go wrong when combining the recipe’s main ingredients of chocolate, vanilla and eggs, the real hero here is the added honey. That’s right, sweet and creamy honey.

The honey gives these little dishes of gloriousness a positively fluffy texture along with an amazingly unique taste.

Upon tasting my husband excitedly said, “This tastes like a dessert I’d order in a restaurant!” before proceeding to eat two servings in one sitting. I’ll consider that two thumbs up.

The best part about these? They are ridiculously, and I mean ridiculously, quick and easy to make. We’re talking five minutes tops here, making them the perfect dessert to whip up prior to a dinner party and stow away in the fridge to dazzle guests with later in the evening.

You don't need heavy milk and cream to make rich desserts! These delicious dairy free pots de crème are sure to satisfy your sweet tooth sans milk.

- 1/4 cup honey
- 1 tsp vanilla extract
- 4 ounces unsweetened dark chocolate
- 3/4 cup regular or vanilla coconut milk - I used vanilla
- berries - to top with
- Add eggs, honey, vanilla extract and chocolate to a blender and blend until smooth.
- Heat coconut milk until very hot but NOT boiling.
- With blender on low gradually add in coconut milk until chocolate completely melts and mixture is smooth and thick.
- Pour into serving bowls and refrigerate for 2+ hours.
- Serve plain or topped with berries, whipped cream, or whatever your heart desires.
