Rich and Easy Gluten Free Brownie Cake

As the big 3-0 approached, I found myself craving the taste of the rich chocolate birthday cakes I enjoyed in my youth.  The only problem was that all of the chocolate cake recipes I had in my arsenal contained gluten.  Not one to be deterred by my gluten-free lifestyle, I set out on a quest to find an easy and delicious alternative to the chocolate cake recipes I remember from my childhood.

Since this was my first attempt at gluten free baking from scratch, I wanted to stick to a fairly straightforward recipe that I could be certain I wouldn’t mess up.  This simple gluten free brownie cake recipe was the combination of several different variations that I found online.  With budget in mind and the knowledge that gluten free alternatives can be pricey, I used as few ingredients as possible when making this.  I wasn’t initially certain my nine chosen ingredients would produce anything special…boy was I in for a surprise!

This recipe yielded some the most dense and chocolately results I have ever tasted.  Due to the fact that this is such a rich cake I would not recommend it to the casual chocolate fan because it is just TOO INTENSE.  However, if you are like me and your feelings toward chocolate are more along the lines of “the more the merrier” whip up a pan of these puppies! You will not be disappointed.

This brownie cake would have been perfectly delightful left un-frosted but I was of course going for the full birthday cake experience and knew icing was in order.  I fully admit that I broke some dietary rules when it came to the frosting.  I certainly could have made something healthier but I was craving a chocolate cake topped in the classic 7 Minute Frosting my grandmother and mother used to coat my birthday cakes in.  The combination of the rich, dense chocolate with the airy and fluffy frosting was absolute perfection.

I am so pleased that this was my first foray into gluten free baking.  The recipe was as delicious as it was easy and the yummy end result left me excited for future (and more complex) gluten free baking adventures.

Ingredients
  • 2/3 cup almond flour
  • 1/2 tsp salt
  • 1 tbsp cocoa powder
  • 6 oz dark chocolate coarsely chopped
  • 1/2 cup coconut oil
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup dark chocolate chips
Servings: people
Instructions
  1. Preheat oven to 350 degrees
  2. Lightly grease and line 8x8" baking tin with parchment paper
  3. In a medium bowl whisk almond flour, salt and cocoa powder together. Set aside.
  4. Put dark chocolate and coconut oil in a large glass bowl and microwave for 30 seconds. Stir and repeat until chocolate and coconut oil are completely melted.
  5. Add sugar to bowl of dark chocolate and coconut oil. Whisk until combined.
  6. Once mixture is at room temperature add 2 eggs and whisk until combined.
  7. Add vanilla to mixture and stir. Take care to not over beat!
  8. Sprinkle flour mixture over the chocolate mixture and fold the flour mixture into the chocolate until just a bit of the flour is visible.
  9. Fold in chocolate chips
  10. Bake in preheated oven for approximately 30 minutes or until a toothpick comes out with moist crumbs attached.
  11. Cool brownies completely before cutting into equal squares.
