Months and months ago as the days were growing shorter and colder, my husband and I were experimenting with new drink recipes as we often do and stumbled upon the most delicious gin based cocktail. I immediately wanted to share the recipe but knew it was too Springy to put up at the time, so I tucked the cocktail away in the back of my mind until sunnier, warmer days returned. Well, those days are here and I am excited to finally present to you with the Lolabee, a fruity gin cocktail.
The Lolabee was named after our Puggle, Lola, because it features her favorite fruit, strawberries. (Let me assure you all that the strawberries are the only part of this cocktail she is allowed to partake in.) This delicious blend of fresh grapefruit juice, muddled strawberries, honey, and pineapple juice perfectly balances out the piney taste of gin to create a decidedly Spring and Summery drink.

Now that I’m getting home from work before the sun sets I’m looking forward to spending many an evening watching the sun go down while sipping a Lolabee on our balcony.

What are your favorite cocktails for Spring and Summer?
- 5 strawberries - muddled
- 1 cup pineapple juice - fresh squeezed or bottled
- 1/4 cup grapefruit juice
- 3 ounces gin - 2 shots
- 2 Tbsp honey
- Muddle strawberries in a bit of pineapple juice in a shaker
- Add in remaining pineapple juice along with grapefruit juice
- Pour drinks into glasses using strainer
