Mouthwatering Grilled Salmon Recipe Garnished With Avocado Salsa

A few weeks ago I wanted to make a special dinner for my fiance and I to enjoy while watching the sunset and knew that I couldn’t go wrong with a salmon recipe.  (I’m a Pacific Northwest girl after all!)  After spending entirely too much time browsing various salmon recipes on Pinterest I settled on one made by The Cookie Rookie that combined two of our all time favorite foods, salmon and avocado.  I had a winner!

The finished product – grilled salmon garnished in avocado salsa, roasted potatoes and watermelon…a perfect summer meal!

The Cookie Rookie had modified the original recipe slightly to fit her purposes and I did the same.  I left out the cumin from the salmon rub and the red onion from the avocado salsa because one of us in my household is not a big onion fan!  The end result was a delicious and truly EASY meal.  You could definitely fool guests into thinking that you slaved away over this for hours.  This received rave reviews and will made many more times in the future.

Three Kick-Ass Hollywood Bowl Picnic Ideas

There is nothing I love more than a great summer concert under the stars and this past week we had the pleasure of attending not one, not two, but THREE different shows at the Hollywood Bowl.  The greatest part of the summer concert series at the Bowl is that you get to bring in your own food and drinks and have a picnic while you’re listening to music.  Since the shows all started at 8:00 PM and I don’t usually get home from work until around 6:30, I knew there would not be time on the evenings of for food prep and that I’d need to prepare our meals ahead of time so we could grab them out of the fridge and go.

We don’t frequently have picnics (but we might more often because it was so fun!) and I admittedly got really into meal planning.  My fiance had been on the road for work in the days prior and I wanted our first evenings back together to be special and full of yummy food and wonderful music!  So without further ado, here is what I made for our picnic dinners last week.

Picnic number two for Beethoven – smoked salmon, sea salt crackers, olives, cucumber and blueberries, Toblerone, and wine.

Spinach Detox Soup

I have been all about detoxing lately in an attempt to speed along my body’s healing process and to jump start my immune system.  This Spinach Detox Soup is perfect for doing just those things and, as an added bonus, tastes great on hot summer days!

The original recipe I used was found at Hello Natural (I am completely obsessed with this site, they have the most amazing recipes and natural tips and tricks!).  I stuck pretty close to the recipe but increased the amount of spinach included, used garlic and ginger powder rather than the recommended clove and root and left out the cumin because I didn’t have any on hand.  The result was a healthy, refreshing, surprisingly filling, and EASY soup that both my fiance and myself loved.  This soup is great for a light standalone meal or as a starter.  This is definitely going to be a mainstay recipe this summer.  Please let me know if you try the recipe and what you think!

Summer Sangria

July 7, 2015

After scouring Pinterest for an easy, patriotic sangria recipe to prepare for the Fourth of July that would not take days to chill, I discovered this gem from Lovely Bits.  I made some slight modifications to the original recipe (I added more fruit than originally called for, changed the sugar to fruit ratio as well as the wine to club soda ratio, etc.) but kept the overall integrity of the recipe intact.  The result was some seriously yummy and refreshing patriotic sangria!  I will definitely be preparing this again to enjoy during lazy summer days by the pool and at twilight dinners.
