Roasted Bacon Potato Salad

I was looking for a potato salad recipe to serve alongside salmon earlier in the summer and stumbled across this recipe in all it’s bacon-y glory.  I firmly believe that bacon improves all dishes and this one was not an exception!  We have become such big fans of this potato salad recipe that we have been eating it at least once a week.  It is fabulous hot or cold and perfect for a picnic, in fact we took it to the Hollywood Bowl a couple weeks ago to enjoy during a Beethoven concert.

I did make one crucial change to this potato salad recipe – the original recipe called for mayonnaise and I unfortunately do not eat mayonnaise.  I substituted the mayo with extra virgin olive oil and the dish was still perfectly moist and delicious.

So turn on that oven, pull out those baking sheets and get ready to enjoy a delicious potato salad!

Ingredients
  • 3 lbs red potatoes cut into 1/2 inch pieces
  • 8 slices bacon cooked and crumbled
  • 2 scallions chopped
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/2 cup olive oil extra virgin
Servings: people (depending on whether you're serving as a side or as the main dish)
Instructions
  1. Pre-heat oven to 450 degrees and slice potatoes.
  2. Arrange potatoes onto slightly greased baking sheet and cook for 30-35 minutes (I used olive oil).
  3. Remove potatoes from oven.
  4. Line a baking sheet in foil and arrange bacon. Cook for 7-20 minutes until bacon is crisp. The timing will depend on oven temperature and whether bacon is pre-cooked. (I left my oven at 450 degrees and used pre-cooked bacon so I had a very short cook time.)
  5. Chop scallions
  6. Remove bacon from oven and cool.
  7. Once bacon has cooled chop or crumble the pieces between your hands into a bowl with your potatoes.
  8. Mix together bacon, potatoes, salt, pepper, and garlic powder while gradually adding in the olive oil. Continue mixing until ingredients are distributed evenly. Enjoy!

Three Kick-Ass Hollywood Bowl Picnic Ideas

There is nothing I love more than a great summer concert under the stars and this past week we had the pleasure of attending not one, not two, but THREE different shows at the Hollywood Bowl.  The greatest part of the summer concert series at the Bowl is that you get to bring in your own food and drinks and have a picnic while you’re listening to music.  Since the shows all started at 8:00 PM and I don’t usually get home from work until around 6:30, I knew there would not be time on the evenings of for food prep and that I’d need to prepare our meals ahead of time so we could grab them out of the fridge and go.

We don’t frequently have picnics (but we might more often because it was so fun!) and I admittedly got really into meal planning.  My fiance had been on the road for work in the days prior and I wanted our first evenings back together to be special and full of yummy food and wonderful music!  So without further ado, here is what I made for our picnic dinners last week.

Pasta salad - picnic ideas

Picnic number one for John Fogerty – pasta salad, fresh blueberries and Pranqster.

Smoked salmon - picnic ideas

Picnic number two for Beethoven – smoked salmon, sea salt crackers, olives, cucumber and blueberries, Toblerone, and wine.
