We only have two days left until New Year’s Eve! Has this year FLOWN by for anyone else? I don’t know if that feeling comes from the fact that I’ve had such an eventful year or whether it just comes with the territory of getting older. Let’s just say it’s due to an eventful year.
I’m not really one for New Year’s resolutions, but I have always loved the concept that the clock striking midnight on January 1 symbolizes a fresh start. It means that there are 365 pristine, beautiful days ahead to make the most of. 365 days worth of unique adventures to come.
What better way to celebrate that than by clinking together a couple of glasses of champagne when you finally roll out of bed in the morning? These raspberry peach bellinis are the perfect New Year’s drink to keep the party going, all the while convincing yourself that you’re being healthy because you’re consuming fruit along with alcohol.

The cheery colors of the peaches and raspberries ensure that these bellinis are as gorgeous as they are delicious. Don’t be surprised if you end up eating the puree straight…I did!

- 1/2 cup water for simple syrup
- 1/2 cup sugar for simple syrup
- 3 cups frozen peaches
- 1 cup fresh or frozen raspberries
- 1 bottle champagne
- Make simple syrup by combining sugar and water in a small saucepan. Bring it to a boil. Lower heat and stir until the sugar disolves.
- Combine simple syrup, frozen peaches and raspberries in a blender and puree. You may need to add additional water to thin out the mixture.
- Add as much or as little puree as you desire to the bottom of a champagne glass and top with champagne. Careful, it's going to bubble!
