The Lolabee – A Fruity Gin Cocktail

Months and months ago as the days were growing shorter and colder, my husband and I were experimenting with new drink recipes as we often do and stumbled upon the most delicious gin based cocktail.  I immediately wanted to share the recipe but knew it was too Springy to put up at the time, so I tucked the cocktail away in the back of my mind until sunnier, warmer days returned. Gluten Free Breakfast Bowl

Has the time change hit anyone else really hard?  I’m not certain whether my failure to adjust is due to the fact I was already exhausted going into last weekend or whether my body’s clock really is as off as it feels.  Whatever the case may be, I haven’t been springing out of bed the past few mornings as quickly as I would like.  That is why it is especially important that I get a filling and nutritious breakfast in before heading off to work each day.  Enter my new favorite chia seed-based gluten free breakfast bowls.

The BEST Oven Baked Salmon Recipe

After a day at work, an hour and a half long commute home and an evening workout I am usually pretty exhausted by the time dinner rolls around.  Regardless of how I feel, I make an effort to cook dinner for my husband and myself every night.  While some meals can be labor intensive, most are super straightforward like this oven baked salmon.  It is such a delicious and easy meal that we have taken to eating it a minimum of once a week.

This oven baked salmon recipe needs just a handful of ingredients, takes only a few minutes to make and requires zero cleanup!

Vegan Blondies

The struggle is real when it comes to finding delicious desserts that I can eat.  Not only am I pretty strictly gluten free, I have also cut back on eating sweets as of late.  You see, I have a bit of a sweet tooth and fall into the bad habit of consuming excess amounts of cookies and candy during the holiday season.  This past year was no exception and with everything going on in my body right now I made the decision to cut out unnecessary desserts.  Smart plan, right?  Sure, until I’m hit with a major craving and give in to it.

Knowing that I would inevitably cave to the urge to eat sugar at some point, I began searching for ways to satisfy my cravings in a healthier way.  I initially tried replacing cookies with fruit but that didn’t quite do the trick.  Enter chickpea blondies.  Yes, you read that right.  Chickpea blondies.

This unconventional vegan dessert is loaded with protein and fiber rich chickpeas making it a delicious AND healthy way to satisfy your sweet tooth!

Homemade Dog Treats

This week’s recipe is something just a little different in that it is geared towards the canine in your life.  If you happen to not have a canine in your life, please feel free to skip over this post.  I promise to return to regularly scheduled human-geared programming next week.

I have been wanting to make homemade dog treats for Lola for the longest time and decided that her seventh birthday was the perfect time to give it a try!  There are a plethora of dog treat recipes available online to wade through, a mind boggling amount in fact.  I ultimately created my own recipe based on her dietary restrictions (she doesn’t eat too much grain), what human foods she enjoys the taste of and, admittedly, what I thought would also be acceptable for human consumption.  I was curious to see what they tasted like!

Based on Lola’s reaction I think I hit it out of the ball park with this recipe.  Not only did she adore them, they’re also healthy and actually make a decent human snack as well.
