Shrimp and Asparagus Stir Fry

File today’s recipe under the “dinners we eat once a week” category.  Much like the oven baked salmon recipe I shared a few weeks back, this easy and healthy shrimp and asparagus stir fry makes an appearance on our table more often than I’d like to admit.  Who can blame me for defaulting to it?  It’s quick to whip up, offers an additional dose of vegetables and I just can’t get enough of the tangy combination of ginger, soy sauce and shrimp.  Add in a crisp glass of white wine and an evening warm enough to dine on our balcony and you’ve got the recipe for a perfect spring night as far as I’m concerned.

Shrimp and Asparagus Stir Fry

Now I know decent shrimp is not necessarily easy to come by in other areas of the country and the world.  Don’t let that deter you!  Let me share a little secret with you right off the bat.  I use Trader Joe’s frozen raw shrimp 95% of the time.  No freshly caught shrimp in this household.  It’s a decision based more on practicality than anything; I try to go grocery shopping only once a week, therefore having fresh shrimp sitting around isn’t the wisest of options.  Plus the Trader Joe’s shrimp I buy is wild, cleaned and ready to de-thaw and saute.  You can find awesome similar options at most local groceries.  It’s too easy of a solution not to take.  Once I add in the asparagus and special sauce I honestly can’t tell the difference between freshly caught and freshly thawed!

Shrimp and asparagus aside, the real heroes of this meal are the sauce and spices.  I’ve started wanting to put this combination of ingredients on EVERYTHING I eat!  It’s an unbeatable combination of sweet and sour, accented by an extra tang of citrus.  SO.  DELICIOUS.

Ingredients
  • 1/2 lb large shrimp
  • 1 lb asparagus
  • 1/4 tsp garlic powder
  • 1/2 tsp ginger powder
  • 1/8 cup lemon juice
  • 3 tsp soy sauce
  • 2 tbsp olive oil
  • Optional rice - amount based on preference
Servings: people
Instructions
  1. Chop asparagus into bite sized pieces.
  2. Whisk together soy sauce and lemon juice in a small bowl. Set aside.
  3. Add 1 tablespoon of olive oil to a large frying pan over medium heat.
  4. Add raw shrimp to pan and cook for approximately three minutes, flipping throughout, until shrimp is opaque. SLIGHTLY UNDERCOOK.
  5. Remove shrimp and set aside.
  6. Add 1 tablespoon of olive oil to pan (if needed) and cook asparagus until it is bright green and slightly tender. Depending on the thickness of the asparagus this takes between 5-10 minutes.
  7. Add ginger and garlic to the asparagus and stir. Cook for an additional 30 seconds.
  8. Pour lemon and soy sauce mixture into the pan with the asparagus and add shrimp back in. Simmer for approximately one minute. Remove from heat and serve alone or over rice.
